A Few Recipes…

Since I can’t upload anything onto this computer I’m using at an office to check my e-mail, I thought I’d share some great easy recipes with you that I love to use. They are slowcooker recipes and what got me thinking about this is my upcoming kitchen renovation. It is NOT going to be fun.

Right now construction is in full swing. DH has dug a new basement addition and had dug out the crawl space under the kitchen. Century old houses are always a lot of work. :) I have a lot of dust and the house is freezing but at least the kitchen is intact…for now. Once we start on that, I’m not goign to be able to cook with my range. I was trying to think up how I’m goign to feed 7 people without it. Hmmmm…. The slow cooker and my BBQ will be a life saver. I have a couple favorite Slow cooker recipes that are SO easy, I thought you might enjoy trying them out too. And with this entry, I’d like to ask for your help as well. :) Do you have any good slow-cooker recipes or recipes for those new roasting ovens? I have one of those as well. If you’d care to share one, I’d love to try it out. Post it to your blog and link back to this entry, post in a comment on this entry, e-mail it to me…whatever. If a few kind people wish to share, it would really help me out and also, I’m sure others as well, would love to see your recipes. :)

Here are my quick and easy ones….

BBQ Pork

one boneless pork loin roast

1/2 cup BBQ sauce

Place roast in slow cooker. Pour BBQ sauce over top. Cook on low for 5-6 hours. Shread pork with forks and serve on buns.

Taco Chicken

4 boneless chicken breasts

1 package of taco seasoning

Place chicken breasts in slow cooker. Sprinkle with taco mix. Cook for4-6 hours on low. Shread meat and serve in tortillas with lettuce, cheese, tomatoes and taco sauce.

:) Told you they were easy! But they are great family friendly recipes. More time to stamp! ;) And I’m sincerely hoping my new wireless modem will arrive today so I can actually post some new designs! I’m trying to hang in there….

    Can’t wait to try those recipes…here is one to try…it’s simple and pretty yummy! :)

    Crockpot Mushroom Beef Stew
    1 1/2 pounds beef stew meat
    1 can (10.75-oz.) condensed cream of mushroom soup
    1 can (4-oz.) sliced mushrooms, drained
    1/2 cup dry red wine (sometimes i find this a bit strong so i add a bit of h2o to dilute)
    1 packet onion soup mix

    Directions
    Combine beef stew meat, mushroom soup, mushrooms, red wine and onion soup mix in a crockpot. Mix well until thoroughly combine. Cook on low for 8 to 12 hours, or until beef is tender.

    It is great served over egg noodles, mashed potatoes, rice, etc.

    Here is one of our favorites:
    Taco Soup
    1 pound ground beef
    1 large can crushed tomatoes
    1 can corn
    1 can black beans
    1 can kidney beans
    1 can pinto beans
    1 env. Hidden Valley Ranch dressing mix
    1 env. taco seasoning mix
    1/4 c. chopped onion
    Brown the ground beef. Combine all ingredients (including all liquids from the beans and corn) in crockpot and cook on low 4-6 hours. Serve with tortilla chips and shredded cheese.
    Now…I know you’re thinking: how will I brown the ground beef without a range? I like to buy extra ground beef when it’s on sale and cook all of it up and then freeze the cooked meat in approx. 1 pound portions (I stick it in Zip-lock bags). I can then take a bag of meat out of the freezer, throw it in the crock-pot and proceed with the recipe.

    I have a chicken recipe that is very similar to your pork one (it is DH’s favorite!)

    4-6 chicken breasts
    1 cup BBQ sauce
    1 can whole cranberrys

    into the pot and cook on low for 4-5 hours (or if using frozen chicken…5-6 hours)

    Also…I make lasgana (don’t think that’s spelled correctly!) in the crock pot all the time….I use the no-cook noodles and just break up the noodles to kinda cover the shape of the pot…layer as usual and bake on low for 4-5 hours

    chili in the crock pot is easy too!!

    I came up with what I call an Italian Roast all by myself…
    3-4 pound roast
    3 cans whole potatoes
    2-3 cans stewed tomatoes (with Italian seasoning or something similiar)
    1 pkg of Good Seasons Italian dressing mix (powder)

    Put roast and potatoes in crock. Mix seasoning and tomatoes and pour over meat. Cook on low for 8-10 hours.

    This feeds a family of 4, so you would want to change it and add the ingredients accordingly. My family loves it. I’ll try and get a few more out that we love. I use the crockpot all of the time!!!

    Good luck with your renovations! Just keep thinking about the end results– how lovely your new kitchen will be!!

    Here’s an easy recipe that hubby and I enjoy:

    Chicken Cacciatore

    Chicken drumsticks, thighs (whatever your preference)
    1 can of diced tomatoes (seasoned is better)
    Mushrooms
    Onions
    Peppers
    1-2 cloves of garlic
    Salt, pepper, oregano, parsley, & basil

    Stir tomatoes, veggies, & seasoning together. Add on top of chicken. Cook on low for 6-8 hours.

    I just dump everything in the crockpot, eyeballing the level to see if it’ll be enough for us. You can add more if you’re feeding seven! And best of all, if you get diced tomatoes with seasoning, you don’t even need to add your own.

    Here’s a simple recipe for Chicken Salad. I’ll take a whole chicken, wash it out, sprinkle salt and pepper both inside and outside the chicken and toss it in the crockpot for 3-4 hours on high. I don’t add water or anything. You’ll know the chicken is done when the meat falls from the bone.

    I remove the chicken from the crockpot, let it cool and then remove the meat. In a big bowl, I mix the shredded chicken with mayonaise, onion, a squirt of yellow mustard and call it good. It’s great on deli rolls.

    I love, love, love this recipe:

    Chicken with Italian Sausage

    by the Editors of Easy Home Cooking Magazine

    Chicken with Italian Sausage
    Cook Time:: 5 to 6 hours
    Prep Time:: 15 minutes
    Yield: Makes 6 servings

    Ingredients:
    10 ounces bulk mild or hot Italian sausage
    6 boneless skinless chicken thighs
    1 can (about 15 ounces) white beans, rinsed and drained
    1 can (about 15 ounces) red beans, rinsed and drained
    1 cup chicken broth
    1 medium onion, chopped
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    Chopped fresh parsley (optional)

    Here is one for a good tasting roast in the crock pot!
    Sirloin roast
    1/2 pkg Good seasons Italian salad dressing mix(dry mix)
    2 cups Cabernet Sauvignon red wine

    Turn on the crock pot (5-6- hours).
    I serve this with boiled red potatoes and steamed broccoli.
    Quick and easy and you can get lots of stampin done while you are *cooking*!

    I love cooking a whole chicken in the crockpot, but it usually ends up falling apart and sitting at the bottom with all its remains. By friend suggested I get about 4 sheets of foil and squash them into a ball. Not too tight, kinda loose. Place those in the bottom of your crockpot and place your chicken on top of that. I just spray with some olive oil and either use season salt or lemon pepper and let it cook all day. Turns out great and the foil keeps the chicken separate so it wont be touching all the greasy mess at the bottom.

    :D Am I just loving this blog post today, or what?! LOL — Here is one to share from me:

    Pot Roast

    Season roast with salt and pepper (I use garlic salt). Dredge meat in flour and then brown on all sides. Place in crock pot with powdered onion soup and canned golden mushroom soup (no water). Cook until tender — about 6 hours on low. Can go all day.

    This is AMAZINGLY tender and delicious. Gravy goes wonderfully with mashed potatoes.

    You can add carrots, potatoes or onions to the meat while cooking. I usually cook the veggies separate.

    All these recipes sound great. We gutted our whole first floor of our house. I was 3 months without a kitchen. I washed dishes in a dishpan in the bathtub upstairs!! Cooked in crockpot, electric frypan, microwave and electric saucepan. I swear we did not eat out the whole three months!! We live in the country and would have to drive quite a ways to get to a restaurant and we were too poor doing the project!! I loved my house when it was done, but sure would not want to do it again.

    Julia, Love your blog and wanted to share a crockpot recipe too!

    Creamy Italian Chicken

    4-6 Large chicken breasts
    1 envelope dry Italian salad dressing
    1/2 c. water

    cook on low, until chicken shreds easily. then add 1 can cream of chicken soup (or mushroom or celery–usually just whatever cream soup I have on hand) and one small container of sour cream. Stir into shredded chicken and heat thru. Good over noodles or rice. Yummo!

    Simple and one pot: Pepper Steak! Take as much pepper steak as you would like and put it in the bottom of the crock pot. Add as much cut pepper and onion as you like to eat. Add a can of beef broth and cook until done. My FIL taught me this one and although round steak isn’t fancy or too tender, it is when you cook it this way!

    I see by the dates of the other posts I have come to this section much later than the rest of you but I will share anyway. This is an old Weight Watchers recipe.

    Salsa chicken:
    Boneless or bone in chicken pieces ( enough for the number of people you are serving)
    1 jar salsa
    frozen green beans ( usually use 2 bags for 4 people)

    Layer the green beans in the bottom of crock pot, then the chicken and cover all with the salsa. Cook on low all day.
    Enjoy…
